Why it is built this way
The files people most want to convert are the files they should be most careful with: a scan of a passport, a signed contract, a payslip, a medical letter. The mainstream tools for these tasks require you to upload the document to a company you know nothing about, and then trust a retention policy you cannot verify. Doing the work in the browser removes the question entirely. Nothing is transmitted, so nothing can be retained, logged, or leaked.
There is a trade. A browser cannot do everything a server can — rendering PDF pages as images and converting Office documents both need engines too large to ship to a page. Where that is the case it is said plainly on the tool rather than worked around.
